our five favorite easy winter recipes for when you’re too lazy to cook

It’s cold out, and the last thing on our minds at the end of the day is trying to put together a meal that Gordon Ramsay himself would be proud of. Call it winter blues or a lack of motivation in the kitchen, but something about cold weather makes us crave yummy meals while lacking the enthusiasm to create them. We’ve got good news though — we found recipes that are so simple that you can still pull them together on your laziest of days. From warm bowls of soup to refreshing mocktails, here’s our five favorite recipes we love to pull out in the winter.

Soup might sound like it takes all day to make, but in just 20 minutes, you’ll have a bowl of warm, savory pumpkin soup in front of you. The best part? You won’t even need a blender and you might have all of the ingredients in your pantry already! Who knew a can of pumpkin could be so tasty?

You read that right; you only need three ingredients to turn a bland chicken breast into a tasty entree. Grab some butter and a jar of cajun seasoning, and you’ll have a dish that might become a regular on your weekly lineup. Serve it with roasted broccoli and rice for a warm, healthy meal.

Set it and forget it. This baked ziti will give you an Instagram-able cheese pull and makes terrific leftovers. For more protein, you can add in browned ground turkey or beef! If you don’t have a slow cooker, this can easily be baked in the oven — bake covered at 400°F for 40 minutes, then uncover and bake for about 20 minutes until the pasta noodles are tender.

There’s nothing like a warm bowl of chili on a cold Sunday night. While this recipe doesn’t call for any meat, you can easily add in browned turkey or beef if you prefer. Top it with sour cream, cheese, and some sliced avocado, and everyone will say it’s *chef’s kiss*.

With a full belly, you’ll need a Dry January-friendly mocktail to finish your meal. Try this sparkling pomegranate mocktail you can make up to a week in advance.
