Gluten-Free Pumpkin Pancakes



I find, when I take a moment in the beginning of my day to cook something healthy and delicious just for me, the rest of my day seems lighter and brighter. It’s like giving myself a little present to say ‘You’re special. I believe in you. Go get ‘em!’

Never underestimate the value of caring for yourself first. Too often, we’re so busy tending to others’ needs that we are neglectful of our own, and that leaves us feeling resentful, fatigued and unhappy. Making yourself a priority, even if it’s for 30 minutes a day, can dramatically improve your general mood and outlook on life. Doing something intentionally loving for yourself creates a sense of internal peace and joy to take with you throughout your day and share with the world.

Love yourself this morning with the gift of pancakes. You can’t conquer the day as half a person. A bit of self-love goes a long way to help you become a whole.

Gluten-Free Pumpkin Pancakes

Ingredients

1 ripe banana, mashed

2 eggs

¼ cup pumpkin puree

½ cup almond flour

2 tsp baking powder

½ tsp cinnamon

Coconut oil for cooking

Instructions

Whisk together the mashed banana, eggs and pumpkin (you can also use a blender on low). Mix in the almond flour, baking powder and cinnamon.

Heat one teaspoon coconut oil in a non-stick pan on med heat. Pour small rounds of batter in the pan and cook for 1-2 minutes on each side, flipping gently with a spatula. Repeat with remaining batter.

Pancakes can be kept warm in the oven until ready to serve. Garnish with fruit and coconut if desired.

*Note: These can also be made ahead of time, cooled, separated by sheets of parchment and frozen for later.
