Peach and Thyme Mimosa

With everything mamas do for their family, we know they deserve a special cocktail every now and then. This Peach and Thyme Mimosa recipe from Diethood is perfect for a Mother's Day treat. Juicy peaches, sweet thyme syrup and some fresh bubbly, what more could mama want?!

  • 1/2- cup water

  • 1/3- cup sugar

  • 2 sprigs fresh thyme

  • 2 peaches , peeled, pitted, quartered (if the peaches are too large, use just one)

  • Champagne


  1. In a small saucepan, combine water, sugar, and sprigs of thyme.

  2. Bring mixture to a boil; lower to a simmer and continue to cook for 5 minutes.

  3. Remove from heat, stir, and completely cool in the refrigerator; about 15 minutes.

  4. Remove sprigs of thyme and pour the syrup into a blender.

  5. Add the peaches; puree mixture until combined and smooth.

  6. Divide the peach-mixture evenly between 4 glasses.

  7. Pour Champagne into each glass and serve
